This week I watched a demo by Chef Heather Haxo Phillips of
Raw Bay Area, hosted by Chef Cherie Soria. I loved her presentation because I have been wanting to learn more about making kefir. She made water kefir using the coconut water from a young thai coconut. Then she used the kefir to make coconut yogurt. Another thing I have been wanting to learn more about fermented foods. She used the yogurt to make a lovely breakfast parfait.

Living Light Chef Showcase, Hot Chefs, Cool Kitchen Part 6

I think of all the demo’s I have watched so far I enjoyed this one the best. Chad Sarno took a simplistic yet gourmet approach to the ingredients. He really stressed that we should look for ways to showcase the amazing flavors of the veg!
The first demo was showcasing the glorious tomato! 3 simple dishes using this glorious dish! I learned so much from this demo and got several ideas for my own creations just from watching him work.. I can’t wait for heirloom tomatoes to be in season again!
We have been talking a lot on Facebook about simplicity and this demo fit right in. The tomatoes looked amazing! I was longing for a nice juicy heirloom tomato after it was over.

Living Light Chef Showcase, Hot Chefs, Cool Kitchen Part 4

This week I watched 2 demo’s. Both were of
Chef Martine Lussier, a faculty member of Living Light Culinary Arts Institute. Both were hosted by Chef
Cherie Soria. I love when Cherie hosts- she asks great questions. So did
Jenny Cornbleet.. But I am getting side-tracked. Chef Martine made 2 “baked” recipes. By baked I mean dehydrated. The first one was Almond Mila Muffins. The second was Almond Cacao Pistachio Biscotti.
First thing was that Martine is a great teacher. I enjoyed learning from her very much. Secondly, it was great learning how to make some “raw” baked goods. Thirdly, they both looked amazing.

The video demonstration that I watched this week for Hot Chefs, Cool Kitchen was of Vinnette Thompson making Lemon Chantilly Bars. Not only do these bars look amazing but I learned so much about how to use irish moss, agar-agar and lecithin. (more…)
