Modern Manna Crazy Carrot Pulp and Flax Seed Crackers

During the Modern Manna Health and Healing crusade I was handed a bowl of organic carrot pulp with the question “Could you make something with this?” So I did. I handed them out at the conference after my presentation. They were a big hit. So here is the recipe

2 cups flax soaked in 4 cups water for 2-4 hours
5 cups carrot pulp
2 tsp cumin
1 tsp salt
3-5 cloves of garlic minced
1/2 red onion minced fine

Combine all ingredients and mix well. Divide mixture among 5 dehydrator trays ( I am using an Excalibur) lined with the paraflex sheets. Spread the batter 1/8 of an inch thick. Dehydrate at 140 degrees for 1.5-2 hours and then reduce to 105 degrees. I start my crackers around 11 am to 12pm. Then before I go to bed (around 10pm-11pm) I flip over the crackers directly onto the mesh sheets. Continue to dehydrate until the next morning.
