Field Roast Meatloaf
This weeks Sunday dinner was delish! I had been saving a meatloaf from Field Roast for just this occasion. Our first Sunday with Brittany- a special occasion but we have also been convicted to having a special meal after our home church. Today was that first meal. I am tired but it went well. I made a fresh pasta sauce with the farm fresh tomatoes I got from Davis Ranch. I baked the meatloaf in some of the pasta sauce. After it was done cooking I cut it up into chunks. I mixed the pasta in the rest of the sauce and topped each plate with some of the meatloaf. I sprinkled Galaxy Foods Grated Topping on top (it is sooo good but so far I haven’t been able to find it locally). We had a side of salad with vegan ranch dressing (look in June under conference recipes) and garlic bread (I use Earth Balance Buttery spread).
The verdict? Everyone loved it! Brittany is not a vegan and she loved it. Hubby loved it. I will not lie to you- this meatloaf has a lot of fat in it. We don’t eat something like this everyday and I made it stretch for 9 servings rather than 4 to cut down on the fat. It is very decadent- something you would serve as a treat or a special occasion. I like Field Roast products because they use all natural ingredients- I can trust that. On the other hand I know they are higher in fat so we don’t eat a full serving and we don’t eat it everyday. IF you are looking for something very special and someone is coming over who is not vegan- this fits the bill. They will never know they were not eating meat. I could serve this to my whole extended family and no one would know they were eating grain meat. It really is worth keeping it in the freezer or refrigerator for such occasions. I do want to say though, that I did some research on typical calorie and fat count on meatloaf- and the fat ranged from 10 grams -30 grams so at 29 grams of fat Field Roast fits right in but remember I said that I split mine into 9 servings rather than 4. That made it almost 13 grams per serving rather than 29. I also served it with whole grain pasta- more fiber!
