Hot Chefs, Cool Kitchen Video Culinary Classes Pt 1

This week I watched the culinary class by Martine Lussier. Her class was on how to make Almond Mila Muffins. I learned so much from her. I really am excited to try this recipe on my own. The muffins looked so soft and moist- like a baked muffin but this was a raw muffin! I can’t tell you how fun it is to sit in on these classes. These are 12 of the world’s top living chefs and I am learning from them how to make my raw food diet more vibrant and exciting!

This week I also watched a video by Chef Colleen Cackowski. In her class she teaches how to make her award winning low glycemic chocolate covered almond butter cup. I learned about tempering raw chocolate which is something I have totally been wanting to learn. She also teaches on low glycemic sweeteners which is something that I feel is very important. There are a lot of people out there who are following a low glycemic diet but I think it is important that everyone include some low glycemic recipes into their diets.

One of the things that I love about the classes is that Cherie Soria is the assistant and asks great questions. I hope to someday take the raw chef course at Living Light Culinary Institute. Cherie has put together an amazing staff of teachers for the institute and she has done the same for these culinary classes.

Victoria Boutenko

Author of several books including Raw Family: A True Story of Awakening, 12 Steps to Raw Food, and Green for Life, Victoria has been an inspirational raw food educator for many years. She and her family recovered from a variety of health challenges when they discovered the raw food diet, and “The Raw Family,” including Victoria, her husband Igor, daughter Valya, and son Sergei have traveled the world teaching about the health benefits of raw food since 1994.

Elaina Love

Jenny Cornbleet

Jennifer Cornbleet is a nationally recognized raw food chef and instructor, and a faculty instructor at the Living Light Culinary Arts Institute. She offers classes, hands-on workshops, and consultations nationwide. Her first book, Raw Food Made Easy for 1 or 2 People, has already sold over 100,000 copies. Her second book, Raw For Dessert, was published in August, 2009.

Nomi Shannon

Nomi Shannon is the author of the best selling raw vegan book The Raw Gourmet, and co-author of Raw Food Celebrations. In 2008, Nomi received three “Best of Raw Awards” for Best Raw Educator, Favorite Raw Chef, and Favorite Raw Book. Raw since 1987, Nomi has been featured in Alive magazine, Get Fresh!, San Diego North County Times, Galveston News, as well as numerous radio shows.

Vinnette Thompson

A classically trained chef, Vinnette earned a culinary arts degree from the Culinary Institute of America and is also a graduate of the Living Light Culinary Arts Institute, where she now teaches Pastry Arts—Unbaked! A chef for over 25 years, Vinnette has two culinary passions, vegetarian cuisine and culinary education. She has been Executive Chef of the Raw Food Underground, and teaches culinary arts for the Palm Beach school district in Florida.

Kirsten Gum

Gourmet Raw Food Chef Kirsten Gum is a popular TV host on Travel Channel and Discovery and teaches classes internationally. She is a crusader of healthful living and co-owner of RawTrips.com, dedicated to teaching raw, natural cuisine and connecting guests to their food supply and Mother Earth. Kirsten currently lives in Ecuador where she and her business partner, Jan Zerr, run raw food health retreats.

Heather Haxo Phillips

Heather Haxo Phillips is an accomplished raw food chef who teaches classes throughout the Bay Area. She primarily teaches through Whole Foods Market and Café Gratitude. Heather is a certified raw food chef/instructor and graduate of the prestigious Living Light Culinary Arts Institute. Prior to teaching raw foods, she has had years of experience in the food industry, including catering and kitchen prep.

Martine Lussier

Martine Lussier is Culinary Programs Manager and full-time instructor at Living Light Culinary Arts Institute. She is a certified Professional Raw Food Chef™ at Living Light, and she is passionate about nutrition and culinary arts. Martine is an active sportswoman who knows the value of raw vegan foods for health and vitality. She loves developing new recipes and teaching others how to prepare health promoting foods for themselves and their families.

Colleen Cackowski

Colleen Cackowski has been a raw foodist for 13 years. She has catered green room events for musical artists such as Deva Premal and Miten and other well known performers and teachers. Currently the Executive Assistant to Cherie Soria at Living Light Culinary Arts Institute, Colleen enjoys creating delicious new recipes. Colleen was the winner of the Best of Show and Sweet Treat categories at the LA Best of Raw Cacao contest and more recently the winner of the Low Glycemic category at the NYC Best of Raw Cacao contest.

Sheree Clark

Sheree Clark is the winner of the 2010 Hot Raw Chef Video Recipe Contest. Sheree’s Chocolate Jalapeno Poppers recipe video was the first place winner from among 28 entries as selected by the panel of professional chef judges. It was also the people’s choice winner. Sheree is a graduate of Living Light Culinary Institute, where she received her certification as a Raw Culinary Arts Associate Chef and Instructor. An author, presenter, teacher, motivator, Sheree is a vegan raw foodist, and presents a convincing – and tasty – case for not cooking your food through her consulting business “Fork in the Road.” She is author of three books and scores of feature articles.

Cherie Soria

Founder and director of Living Light Culinary Arts Institute, Cherie Soria is known as the “Mother of Gourmet Raw Cuisine,” Cherie has taught students and world-famous chefs and instructors from around the world for over 16 years. Cherie is also the author of three books, including Angel Foods: Healthy Recipes for Heavenly Bodies, and The Raw Food Revolution Diet: Feast, Lose Weight, Gain Energy, Feel Younger (coauthored by Brenda Davis and Vesanto Melina).
