Raw Taco Salad For My Birthday!

I decided I wanted taco salad for my birthday meal. That way those who are not raw could have bean burritos while I noshed on a lovely raw meal.. I made homemade guacamole and salsa. I chopped up kalamata olives and spicy green olives that I get from my deli, there are chopped onions, green onions and tomatoes.

This is my taco meat. I had heard of making taco meat out of walnuts and frankly it didn’t sound to appealing but I guarantee you that this was delish! Even my hubby said it tasted like cold taco meat- the real deal!
Debra’s Raw Vegan Taco “Meat”
1 cup of walnuts
1/4 cup cilantro
2 to 3 cloves of garlic
pinch of salt
1 to 2 tbsps of organic taco seasoning ( my local health food store and co-op carries it)
3 sun-dried tomatoes (soaked until soft)
Process in food processor until all crumbley and resembling taco meat.

I topped it off with raw vegan ranch dressing
3/4 cup of cashews (soaked)
1/2 cup water
juice of 1 lemon (add half and test to see if you need the rest)
2 tsp basil
1 to 2 cloves of garlic
salt and pepper to taste
Put all ingredients in blender and blend until nice and creamy. Test to see if you need more lemon juice or more seasonings.
It was an incredibly successful meal! I can’t wait to have the leftovers as raw burritos for lunch tomorrow!
